This Opinel set offers two practical paring knives. The blades are made of carbon steel, which is not rust-proof but offers excellent edge retention. To prevent discoloration of the blade, especially after cutting acidic foods, the knife should always be cleaned immediately after use. As with the well-known Opinel pocket knives, the handles are made of beech wood. Not dishwasher safe.
